Perfect Key Lime Pie 

Tangy-sweet key lime pie is creamy, citrusy, and with a perfectly crisp crust. It’s easy to make, and sits on a thick and nutty oats and walnut crust. This recipe makes for one pie pan or tart pan.

Ingredients 

Crust 

  • 150 g unsalted butter 
  • 50 g semi-sweet chocolate 
  • 130 g desiccated coconut 
  • 100 g rolled oats 
  • 75 g sugar 
  • 60 g chopped walnuts 
  • 50 g (1) egg 
  • 10 g vanilla extract 

Filling 

  • 2 gelatin sheets 
  • 200 ml lime juice, fresh 
  • Zest of 2 Limes 
  • 370 ml sweetened condensed milk 
  • 250 ml whipping cream, whipped 
  • Lime slices for garnish 

Method 

1. Melt the butter and chocolate together in a bain marie or a saucepan on low heat. 

2. Mix together the melted butter and chocolate with the coconut, oats, sugar, walnuts, eggs, and vanilla. Press into a pie pans or a fluted tart pan. 

Filling 

3. Bloom the gelatin sheets into cold water. 

4. Heat the lime juice and zest just until warm. Take off the heat and stir in gelatin. 

5. In large bowl, whisk together the lime juice mixture. And sweetened condensed milk. Let the mixture cool. 

6. Fold the whipped cream into the condensed milk mixture. 

7. Pour the filling into the pie shell and let set. Decorate with lime slices.
