Tiramisu

Unbelievably easy tiramisu, no-bake dessert. Delicious layers of coffee-soaked ladyfingers and sweet mascarpone cream. This dessert could be made with eggs or an option of a egg free version using cream.

Ingredients 

  • 6 eggs, separated (or substitute with 400ml 35% cream)
  • 90g or 6 tbsp sugar 
  • 450g mascarpone  
  • 500ml espresso coffee  
  • 450g or 1 pack savoiardi (lady fingers) 
  • Cocoa powder, for dusting 

Instructions

This recipe makes a 9 by 13 half size deep foil pan.

Method 

1. Separate the eggs and whip the egg whites in a clean oil free bowl until stiff sprinkle about 1 tbsp of sugar half way through whipping. Set aside. 

2. Whip the egg yolks with the remaining sugar until thick and pale. Fold in soften mascarpone. 

3. Fold in the egg whites. 

4. Prepare the espresso, dip the ladyfingers one at a time for a second or two. 

5. Layer the ladyfingers in a serving pan with the mascarpone cream. 

6. Top with sifted cocoa powder. 

7. Refrigerate for at least a couple a of hours, best overnight. For an egg free tiramisu use 400 ml of 35% cream.
