
This gooey and decadent chocolate lattice pie recipe is chewy, sweet and crispy all in one bite.
Chocolate Dough
Ingredients
- 450 g butter
- 230 g sugar
- 3 g salt
- 2 eggs
- 5 ml vanilla extract
- 450 g pastry flour
- 130 g cocoa powder
- 160 g All purpose flour
- 5 g baking powder
Method
1. Cream together the butter, sugar, and salt until light and fluffy.
2. Add the eggs and vanilla and mix to combine. Scrape down the sides of mixing bowl.
3. Sift together the pastry flour, cocoa powder, bread flour, and baking powder. Add to the butter mixture and mix just until the dough combines together.
4. Chill in the refrigerator for 30 minutes.
5. Roll out the chocolate dough until it is 1/4 inch thick in a pie pan
Pie filling
Ingredients
- 190 ml corn syrup
- 135 g brown sugar
- 2 g cornstarch
- 22 g melted butter
- 1 egg
- 150 g walnut pieces
- 70 g raisins (optional)
- 5 ml maple extract
Method
1.Preheat the oven to 400°F (200°C).
2. In a mixing bowl. Mix the corn syrup, brown sugar, and cornstarch with a paddle on second speed for 2 minutes. Scrape down the side of the mixing bowl.
3. Add the melted butter and scrape bowl.
4. Add the egg and vanilla and mix until smooth.
5. Combine corn syrup mixture with the walnut pieces, raisins, and maple extract.
2. Pour the filling into the chocolate dough–lined pan. Create a lattice top with leftover dough.
3. Bake until the filling is set, about 45 minutes.
